Interview with Executive Chef Zarko Lukic

Q: Where did you grow up?

A: I grew up 15 km from the capital of Croatia – Zagreb. 

Q: How did your interest in cooking and cuisine develop?

A: I developed my love for the kitchen first with my grandmother and then with my mother. I graduated from high school as a chef and that's how everything else started

Q: What was your favorite meal growing up?

A: There are a lot of dishes and it's very difficult to choose the best one, but the most common dishes are stews, minced meat fritters and kale soup.

Q: Is there a chef that you look up to? Are there any special techniques you follow in the kitchen that came from them?

A: I admire Heston Blumenthal and his molecular approach to cooking the most and I try to improve my knowledge in that field. But of course I like to learn from all the older and wise people who showed me and taught me old Croatian dishes.

Q: At this very moment, what is currently your favorite dish served onboard?

A: Singapore-Style Tiger Prawns and Slow Roosted Pork Tenderloin. Delicious!

Q: What do you think are the two most important aspects of this role?

A: Knowing how to be a good leader, someone that people can look up to, and also making sure you give respect in order to received respect.

Q: The culinary world is constantly evolving, with new ingredients and way of cooking.

A: What culinary trends have you been following lately? Molecular and traditional ancient dishes are currently some of the trends I’ve been following and continue to follow due to their intricacy and flavor.

Q: When you’re at home, what is your go to meal?

A: I can never go wrong with a BBQ, whole roasted pig or lamb.

Q: Of all the destinations you’ve traveled, what dish was the most memorable? From what destination?

A: Halászlé-spicy river fish soup in Hungary, a traditional dish.

Q: Other than cooking, what other hobbies do you take on?

A: I love reading, riding my bike and of course watching TV, everything related to the kitchen.
