Fabio D’Agosta loves to cook — and that should come as no surprise. After all, as a Former Executive Chef and current Azamara Food & Beverage Manager, food is his life! And food has taken him all sorts of interesting places. He’s prepared meals for some of the most famous people in the world — from Queen Elizabeth to Robert De Niro. And, of course, it’s brought him around the world with Azamara for the last decade.
So when we asked Fabio to prepare a recipe for us to share with our readers, he was happy to offer up his take on Gnocchi di Patate e Sugo di Salsiccia. Not only that, he also made a video of his cooking process, complete with a very special guest — his daughter, Bella!
Gnocchi di Patate e Sugo di Salsiccia
•500 grams of potatoes (not new potatoes, Idaho potatoes are ideal, clean but not skinned)
•180 grams of all-purpose flour (Can use 00 flour if you like)
•1/2 teaspoon salt
•1 medium egg
•In a large pot, boil unpeeled potatoes until tender, remove from the pot, let cool enough to handle, and remove the skin.
•Pass potatoes through a potato ricer.
•On a flat surface, mix together the flour and salt. Make a well in the middle and add the potatoes and egg. Mix together with your fingers to form a soft dough that does not stick to your fingers.
•On a lightly floured surface, cut small amounts of dough to form ropes. Cut the ropes into 3/4-inch (2 cm) pieces, then slide each piece on a fork and squeeze a little (but not too hard).
•Sprinkle with a little bit of flour and toss so they don’t stick together.
•In a large pot of salted boiling water, cook the gnocchi.
•The gnocchi are ready when they float to the top of the pot.
•Drain and toss with desired sauce.
•2 tablespoons olive oil (40 grams)
•1/2 teaspoon salt
•2 cloves large of garlic chopped
•1/4 onion chopped
•1 teaspoons oregano
•5 basil leaves, chopped (or 1 teaspoon/3/4 gram dried)
•2 dashes of hot pepper flakes (if desired)
•1 can Pelati tomatoes with sauce (1 1/2 to 2 cups / 400 grams)
•2 sausages, chopped
•Splash of red wine
•40 grams grated parmesan
•Preheat a saucepan with olive oil.
•Add the garlic and onions, sauté until golden brown.
•Add the sausages and cook for about 2 minutes.
•Add a splash of wine and let evaporate.
•Add the tomatoes and season to taste.
•Cook for about 10 minutes, then add the herbs and chili flakes.
•Add the cooked gnocchi to the sauce and mix together.
•Plate your meal and dust with parmesan on top.
